When I was a kid, my mom made this to stretch a dollar - it was my dad's mom's recipe. We kids used to call it porridge - of course, it isn't REAL porridge, but we imagined that's what the 3 bears were eating before Goldilocks showed up. Read more . Ingredients:
3 large potatoes, peeled and diced
3 large onions, peeled and chopped
6 stalks celery, with leaves, chopped
1 pound ground beef, extra lean (originial recipe used only 1/2 pound)
salt and pepper, to taste
1/4 cup butter
1/4 cup flour
Directions:
1. Put veggies in pot and fill with water. Add salt and pepper (Crazy Salt) and cook until potatoes are mealy. Then crumble meat into pot. Cook another hour.
2. In small skillet, brown the butter and flour until well browned and then add to the soup and stir well. (This is what gives it that really good flavor.)
3. Ladle into bowls and top each with homemade, buttered croutons. If you want to make this pretty - to be honest, it needs help visually - sprinkle a little minced parsley or chives over top of each serving.
