Potato and Cheese Pierogi

potatoes and cottage cheese pierogi (pan fried in evoo)
Ingredients:
5 cups flour
1 egg
1 cup water
3 russet potatoes
8 ounces cottage cheese
1/4 cup extra virgin olive oil
Directions:
1. skin, and boil the potatoes
2. mix first 3 until not sticky, let rest until potates are done boiling.
3. roll out dough until very thin, then use cookie cutter or cup to form circles.
4. mash potatoes- then mix with the cottage cheese.
5. fill dough circle with potatoes, and close by pinching.
6. boil pierogi, cook 2-3 min after they float.
7. either eat them now, or pan fry them> use oil/ or butter, and fry until crisp - can also add some chopped onion to make a butter sauce
