Potage de Tomate (or Tomato Soup if you prefer!!)

This is a very tasty homemade tomato soup that isn't a lot of trouble to make. My family likes it for supper with grilled cheese sandwichs
Ingredients:
1 large yellow onion
1/4 cup butter
3 (28 ounce) cans diced tomatoes with basil, garlic and oregano
4 tablespoons tomato paste
1/2 teaspoon thyme
1 1/2 teaspoons sugar
1 teaspoon salt
1 teaspoon fresh ground pepper
2 -3 cups canned chicken or 2 -3 cups beef broth, your choice
1 cup heavy cream
Directions:
1. Chop the onion and saute in the butter in a 6 quart pot until soft and clear, but do not brown.
2. Add the tomatoes with liquid,tomato paste, thyme, sugar, salt and pepper to the pot, and simmer on low heat for 30 minutes.
3. Add 2 cups of the broth and simmer for 15 minutes more.
4. Remove the soup from the heat and puree in the food processor or a ricer.
5. Pour through a strainer to remove the seeds.
6. Add more broth if needed to reach the consistency you desire.
7. Reheat the soup stirring in the heavy cream, but do not boil.
8. Garnish if you wish with chopped fresh basil, or chopped fresh chives, or chopped green onion.
