Ingredients:
6 1/2 roast, boneless
2 large onions
1/2 cup brown sugar
1/3 cup soy sauce
1/3 cup cider vinegar
2 bay leaves
2 -3 garlic cloves, minced
1 teaspoon grated ginger
1 cup julienne cut carrot
2 cups sliced mushrooms
2 -3 cups fresh spinach leaves or 20 ounces frozen spinach, defrosted
2 tablespoons cornstarch
Directions:
1. 1 place meat, topped with onions in slow cooker.
2. 2 combine brown sugar, ginger, garlic, soy sauce and vinegar. pour over vinegar.
3. 3 cover. Cook on high 6-7 hours.
4. 4 spread carrots, mushroom and spinach over beef.
5. 5 cover. Cook on high 20 minutes.
6. 6 mix cornstarch with 1/2 cup broth from slow cooker.
7. 7 cover. Cook 10 minutes more.
8. 8 serve over rice.
