Delicous Tender Pot Roast made with Beef Arm Roast for a much more tender and juicy roast, with a seasoned tomato sauce.
Ingredients:
4 1/4 lb. beef arm roast
5 medium tomatoes
2 tbsp minced garlic
2 tbsp dehydrated onion
2 tbsp italian seasoning
1 tbsp basil, dry
1/2 tbsp black pepper
Directions:
1. Defrost Beef Arm Roast.
2. Place in oven roasting dish with lid.
3. Season liberally with spices, top, bottom & sides.
4. Roast at 450 degrees for 30 minutes to sear in flavors.
5. Meanwhile remove tomato stems, place top down on microwavable plate.
6. Microwave on high for 2 minutes to soften tomatoes and to loosen skin.
7. Remove from microwave, carefully deskin tomatoes.
8. Remove Roast from oven, mash tomatoes down in and around the sides of the roast.
9. Cover and return to oven.
10. Place drip pan on lower oven rack under roast.
11. Continue roasting at 350 degrees for another 1 to 1-1/2 hours (internal temperature will read 165-170)
12. Remove from oven, let sit for 10 minutes, carve cross-grain, serve with tomato sauce & spice reduction.
