Ingredients:
3 lbs beef roast
2 tablespoons oil
1 cup chopped onion
4 cups beef broth
5 carrots, 1 in chunks
5 potatoes, 2 in chunks
1 1/2 cups sliced celery
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
1 bay leaf
1/2 teaspoon thyme
1 cup diced tomato
Directions:
1. In dutch oven, brown roast in oil.
2. Add onions and saute briefly.
3. Add broth; cover and cook on low for 2 hours;,add more broth if necessary.
4. Add all other ingredients.
5. Bring to a boil.
6. Reduce heat to low and cook for 1-1/2 hours more.
