This is one of my favorite breads, adn everyone who tries it is as pleased as I am with it's just slightly sweet taste and light texture. It was featured on th eback of Fleishman's Yeast package many years ago. It is also something to do with leftover potato water! Read more !!
Ingredients:
6 1/2 cups (about) unsifted
2/3 cups sugar
1 tsp. grated lemon peel
1/4 tsp. ground mace
1 package active dry yeast
2/3 cup potato water
1/2 cup milk
1/2 cup margarine
3 eggs (at room temperature)
1/2 cup unseasoned mashed potatoes
confectioners sugar
Directions:
1. Combine 1 1/2 cups flour, sugar, lemon peel, mace and undissolved yeast.
2. Heat potato water, milk and margarine to 120 to 130 degrees. Add to dry ingredients; beat 2 minutes.
3. Add eggs, mashed potato and 1/2 cup flour. Beat 2 minutes. stir in more flour to make a soft dough.
4. Place in greased bowl; turn to grease top. Cover; let rise until doubled, about 1 3/4 hours.
5. Punch dough down, roll out to 16 x 10 inches. roll up.
6. Place steam side down, in greased 10 inch tube pan. pinch ends to form ring.
7. Cover; let rise until doubled, about 1 hour.
8. Bake at 350 degrees for 40 minutes or until done.
9. Cool in pan 5 minutes. Remove and dust with confectioners sugar. (optional)
