Portuguese Rolled Cookies

These were a childhood favorite cut into different shapes.
Ingredients:
6 large eggs, room temperature
1 1/2 cups granulated sugar
1 teaspoon lemon juice
1 lemon, rind of
1 tablespoon baking powder
6 cups all-purpose flour
1/2 cup salted butter, melted and cooled
1/2 cup vegetable oil
1 teaspoon ammonia, carbonate
2 large eggs, beaten
Directions:
1. Preheat oven to 350°F.
2. In a large bowl, beat the eggs and sugar together until thoroughly combined. Add the flour, baking powder, lemon juice, lemon rind and ammonia then mix well.
3. Blend in the melted butter until thoroughly combined, then add the oil and blend until of rolling consistency.
4. On a lightly floured surface, roll out some of the dough 1/4 inch thick then cut into desired shapes. Brush the cookies with the egg wash.
5. Bake 10 - 20 minutes or until lightly coloured.
