Portuguese Kale Soup Caldo Verde

My grandmother made awesome Portuguese Kale soup. She would soak dry beans, use both beef bones and salted beef in her recipe and boil this soup for hours. If I had the time and the patience I would do it her way. Read more . However this simplified version takes the angst out of cooking simple kale soup.
Ingredients:
1 small cabbage. chopped
2 bunches of kale, chopped
1 small onion chopped
1 can white or red kidney beans, drained
1 lb of portuguese chorizo sausage
8 red potatoes, skin in and cubed
1 750 ml can beef broth
1 c water
salt and pepper, to taste
Directions:
1. In a large pot bring beef broth and 1 cup of water to a boil.
2. Season with salt and pepper and add chorico and onions,
3. Simmer over medium for 15 minutes.
4. Next add the cabbage, kale, potatoes, and beans and bring to a boil.
5. Simmer over medium for another 20 to 30 minutes.
6. Let rest for an 1/2 hour. Serve with bread.
