Portobella Burgers

Juicy and meaty, portobellas make a great vegetarian option to a meat burger. This is super easy to make and takes very little time from prep to table.
Ingredients:
4 portobella mushroom caps
1 medium sweet onion (like walla walla)
2 tablespoons extra virgin olive oil
4 hamburger buns
4 ounces monterey jack cheese, sliced
Directions:
1. Heat grill on high.
2. Clean the portobellas and gently dry.
3. Slice onion in rings & toss with light coat of olive oil. Place in a grill pan.
4. Brush a light coating of extra virgin olive oil on the top and underside of the portobellas.
5. Place pan on grill and cook the onions over medium-low heat. Add the portobellas directly on the grill over a medium-low heat for about 10 minutes, flipping once, until the mushrooms are cooked.
6. Towards the end of the mushrooms cooking time, place buns on the grill and toast. (If you have a shelf in the grill, putting them here will help ensure they don't burn and still get toasty.).
7. Turn heat off, top mushrooms with monterey jack, and allow the cheese to melt before placing the portobellas in the buns.
8. Serve with grilled onions as burger toppings.
