Portable Crunchy Carrot Stix-- Healthied Vegan Snack!

Remember Potato Stix from the late 80s/early 90s? They came in those little blue cans and sometimes I'd get them on Halloween instead of candy? Oh how I loved those!! But I haven't seen them on the market in years. Just as well as I cut out junk food for the most part. So, carrots are a lot more versatile than you'd think- those bags are pre-shredded carrot really come in handy for this. Use any kind of seasoning/spices that you like, the methodology is all the same.
Ingredients:
2 cups shredded carrots
1 1/2 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon ground black pepper
Directions:
1. Mix the olive oil, salt, and pepper together in a small bowl.
2. Put the carrots into a tossing bowl, then pour the oil over them, tossing well to coat the pieces thoroughly.
3. Spread them out onto a cookie sheet.
4. Use your toaster's or oven's broiler setting for this to bake for about 15-20 minutes or until you poke one of the carrots and it's totally hardened.
5. Let cool for 10-15 minutes. Voila, your very own veggie chips that are perfect for on-the-go.
