Pork Tenderloin With Mustard Sauce

Quick, easy and melt in your mouth. You could even use chicken or beef. This recipe is adapted from and can be served with egg noodles, spatzle or rice.
Ingredients:
1 tablespoon olive oil
1 lb pork tenderloin
1/2 teaspoon black pepper
1/4 teaspoon salt
1 cup dry red wine
1 garlic cloves, minced or 1 shallot, finely chopped
2 tablespoons dijon mustard
2 tablespoons water
2 teaspoons cornstarch
Directions:
1. Heat oil in a large nonstick skillet over med-hi heat. Sprinkle pork with salt and pepper and sear in oil for no more than 5 minutes total. Remove from heat and slice into 1 to 1 1/2 inch thick slices.
2. Combine the wine, mustard and minced garlic (or chopped shallots) and pour into pan. Return meat to pan and cover. Reduce heat and simmer 10 minutes turning the meat once. Remove meat from pan.
3. Combine water and cornstarch in a small bowl. Add to pan and bring to a boil until slightly thickened. Serve pork with sauce.
