Pork Stew And Sage Biscuits

This a really old recipe of my mothers. I changed only the type biscuits used, and instead of making gravy from scratch I used the powdered. Mother didn't have amounts for the seasoning so I just throw some in a little at a time and give it the old taste test.
Ingredients:
2 lbs boneless pork cut into roughly 1 1/2 “ chunks
1 cup chopped celery.
1 cup chopped onion.
2 cups water
mc cormick poultry gravy mix
1/3 cup heavy cream
1 1/2 cup sliced carrots firm cooked.
1 1/2 cup frozen peas firm cooked.
1 can big country biscuits
suggestions for seasoning
salt
pepper
cumin
garlic powder
kitchen bouquet
chicken & pork seasoning
fresh parsley - chopped
sprinkle of dried sage
Directions:
1. Preheat oven to 425 degrees.
2. In a med/hot oven proof skillet with a little oil added cook the onions and celery until opaque, remove onions and celery and set aside
3. In the same frying pan fry the pork until nicely browned - turn off heat
4. In the microwave cook the carrots and pea's in small amount of water until all-Dante (still firm) drain and set aside - cover.
5. In a sauce pan bring the water to a boil, turn down heat to low and add enough gravy mix to create a fairly thin gravy.
6. Add the cream and all, or any of the spices you chose to use except the sage.
7. Stir until gravy is well blended.
8. Reheat the pork in the skillet over med/low heat.
9. Pour the gravy mix over the pork in the skillet.
10. Cook and stir for about 3-5 minutes allowing the spices, dripping to marry together and the gravy to thicken up some.
11. Add the cooked carrots, celery and onions.
12. Add the peas also if you prefer them in the stew.
13. Turn off heat and stir until all ingredients are well blended.
14. At this point you can pour the stew into a baking dish if you wish, or just leave it in the oven proof skillet.
15. Cut the center out of the biscuits that have been sprinkled with the sage.
16. Top the stew with the biscuits
17. Bake for approx. 20 minutes or until the biscuits are nicely browned.

19. Place the cooked peas inside the center of the baked biscuits instead of adding the peas into the stew... it looks pretty cute!
