Pork Sirloin Chops with Tomatoes Thorn

Reminiscent of Swiss Steak but with Pork.
Ingredients:
2 19/20 lbs. pork sirlon, lean
20 oz. tomatoes
2 tbsp italian seasoning
2 tsp thyme
28 grams. olive oil
1/2 tsp johnny's seasoning blend
7/20 tsp black pepper
Directions:
1. Remove bone from Sirloin if necessary
2. Use kitchen scissors to cut the meat into 1/2 thick strips by 1-2 inches in lenght.
3. Combine meat and seasonings in stainless steel pan
4. Brown well, stirring occasionally
5. Add skinned tomatoes, cut up and mix in
6. Simmer at a rapid boil for 20-30 minutes, or until the liquid has been reduced by about half (should be thicker & creamier)
7. Serve hot over mashed potatoes
