Ingredients:
pork skin
salt
black pepper
paprika
west indian all purpose seasoning
Directions:
1. Get your self some pork skin. Most butchers have it as an excess product, so it's cheap or free if you know them.
2. Trim off excess fat (if you want to) cut into manageable sized pieces 1 to 3 pieces.
3. Season with salt, black pepper, paprika, (all purpose seasoning optional).
4. Put skins in fridge min 24 hrs pref 48-72 hrs.
5. Remove from fridge. Dry the pork skin the salt will have help some of the water leach out. Grind a little more salt on both sides of the skin.
6. Deep fry the skins until crispy or done to your taste.
