Ingredients:
molasses-roasted pork
4 cups shredded cabbage
2 cups shredded carrots
1 scallion, trimmed and thinly sliced
1 tablespoon grated or minced fresh ginger
2 tablespoons lemon juice
1/3 cup hoisin sauce
1 1/2 cooked pork tenderloins
4 whole-wheat or multigrain sandwich buns
Directions:
1. In a large bowl, combine the cabbage, carrots, scallion, ginger, lemon juice, and hoisin sauce and toss to combine. Slice the pork and layer it on the buns, mounding the coleslaw on top.
