I have always loved noodle soup. This recipe goes back to when I was a poor student. When I'm eating alone, I often make variations of this noodle soup. So comforting and budget friendly!
Ingredients:
2 pork shanks
1/2 small onion, diced
2 slices of ginger
1 c baby bok choy, sliced
1 carrot, peeled and sliced
1 c chicken stock
1 egg
1 package of your favourite ramen
1 tsp sesame oil
water
Directions:
1. Bring 4 cups of water to a boil. Add pork shanks, egg, onion and ginger. Bring to a boil and simmer covered over medium for 20 minutes. Liquid should reduce to half.
2. Strain and reserve liquid.
3. Cool pork shank, remove bone and slice meat.
4. Remove shell from egg and slice.
5. Add fresh water to pan. Add ramen when it comes to boil. Cook to desired tenderness and drain.
6. Add pork liquid and chicken stock to pan. Bring to boil and gently blanch bok choy.
7. Add ramen, sliced pork, sliced egg, carrots and sesame oil.
8. Remove and serve hot.
