Pork Chops With BBQ Onions

This dish is so easy and delicious! Chipotle peppers give the sauce an extra smoky kick. Serve with baked sweet potatoes and garlic green beans for a simple weeknight meal.
Ingredients:
4 boneless thick-cut pork chops
1 large onion, thinly sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1/2 cup barbecue sauce
1 tablespoon chipotle chile in adobo, diced
1/4 cup chicken stock
1 tablespoon worcestershire sauce
Directions:
1. Season pork chops with salt and pepper. Brown in a skillet with olive oil over MEDIUM heat until cooked through (about 6 minutes per side, depending on thickness of the pork chops). Medium heat will ensure the outside gets brown and crusty while the center cooks thoroughly.
2. Remove pork chops to a separate plate, and add onions. Cook over medium heat until onions are caramelized (about 10-15 minutes), stirring frequently.
3. Add remaining ingredients and stir to combine. Let the sauce thicken over medium-low heat for about 5-10 minutes.
4. Return the pork chops to the sauce just to heat through, and serve.
