2 tablespoons vegetable oil |
6 pork loin chops or 6 rib chops |
1 teaspoon salt |
1/4 teaspoon pepper |
2 cups tomatoes, chopped, 2 medium |
2 cups radishes, thinly sliced |
1/2 cup onion, chopped, 1 medium |
3 tablespoons orange juice |
2 tablespoons lime juice |
2 tablespoons fresh cilantro, snipped fine |
2 tablespoons vegetable oil |
1/4 teaspoon salt |
1/4 teaspoon pepper, freshly ground |
Directions:
1. * Pork Chops should be about 1/2-inch thick. Prepare Radish and Cilantro Relish and set aside. 2. RADISH AND CILANTRO RELISH: Mix all ingredients in a glass or plastic bowl. 3. Cover and refrigerate at least 1 hour. 4. Heat oil in a 10-inch skillet until hot. Cook pork chops in oil over medium heat until brown; sprinkle with salt and pepper. 5. Remove pork from the skillet. 6. Cook and stir relish and tomatoes in the same skillet for 5 minutes. 7. Add pork chops and heat to boiling; then reduce the heat. 8. Cover and simmer until pork is done, about 45 minutes. 9. Garnish with the snipped fresh cilantro if desired. |
