Healthy pork tenderloin recipe with generous portions, especially if served with Jasmine rice.
Ingredients:
2 lb pork tenderloin, cubed
1 green bell pepper, bite size pieces
2 red bell peppers, bite size pieces
1 small onion, diced
2 tsp basil (dried or fresh)
1/4 c italian parsley, fresh, minced
1/2 tsp salt
1 tbsp pepper
16 oz diced tomatoes, drained
Directions:
1. Spray a pan with nonstick cooking spray, sear the pork tenderloin until brown on med-high heat, about 5 min, seasoning with salt and pepper.
2. Add the onion and peppers, stir until onion is translucent.
3. Add the diced tomatoes, bring to a boil.
4. Reduce heat, cover and simmer for 20 min or until pork is no longer pink inside.
5. Mix in basil and parsley last, just before serving.
