This recipe intrigued me. It's from The Best of the Best From Michigan Cookbook that I received in the Bi-Annual Cookbook Swap.
Ingredients:
1 cup raisins
1 cup boiling water
1 (15 ounce) can pork & beans
2 cups sugar
3 eggs, beaten
1 cup vegetable oil
1 teaspoon vanilla
3 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1 teaspoon baking soda
1 cup chopped nuts
Directions:
1. Preheat oven to 325 °. Grease and flour a 5x9-inch loaf pan.
2. Soak raisins in boiling water about 10 minutes.
3. Mash beans with fork until smooth; add sugar, eggs, oil, and vanilla, and mix well.
4. Sift together flour, cinnamon, baking powder, and baking soda, and fold into egg mixture.
5. Drain raisins; fold raisins and nuts into batter mix. Spoon batter into loaf pan.
6. Bake 50-60 minutes or until knife inserted in center comes out clean.
7. Note: If you have a couple of ripe bananas, you may add them to mixture.
