This is the recipe my friend Darlene uses for Christmas for a fruit cake, only she adds applesauce. The cake will keep indefinitely. These were cheap cakes to to serve at camps for desserts. When Darlene shared the recipe with me, there are no baking instructions on this... so I'm guessing on times and temperature.
Ingredients:
1 lb raisins
1/2 cup lard
1 cup water
2 cups applesauce
2 cups sugar
1 cup water
4 cups flour
1 teaspoon nutmeg
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/2 cup gumdrop
1 cup walnuts
1/2 cup dates
1/2 cup candied fruit
Directions:
1. Boil together: raisins, lard, applesauce, and 1 cup water.
2. Add sugar, cold water and dry ingredients to hot mixture, mixing well.
3. Stir in the rest of ingredients.
4. Pour into a buttered cake pan.
5. Bake at 325 degrees for 90 minutes or until done.
6. May be served with whipped cream or white (hard) sauce.
