POOR MAN’S PUDDING DATED 1912 This recipe came from an estate sale. I obtained it when I purchased the family collection from the McDonald Estate in Wylie, Texas in 1990. Notation on card indicates this is an old German recipe.
Ingredients:
2 cups brown sugar
2 cups water
1 tablespoon flour
1/2 tablespoon maple extract
2 cups flour
3/4 cup sugar
4 tablespoons baking powder
4 tablespoons melted lard
1/2 tablespoon salt
Directions:
1. Preheat oven to 350.
2. Combine brown sugar, water, flour and maple extract in a saucepan and bring to a boil.
3. Pour this sauce into an ovenproof dish.
4. Mix 2 cups flour with sugar, baking powder, melted lard, and salt.
5. Add flour mixture by big spoons to put all over the sauce.
6. It will even as it will cook.
7. Bake 35 minutes.
