Poor Mans Potato Soup

My mom used to make this when I was little and we were broke, I always wished she'd make it more often! You can add more to it like ham or cheese, but then a poor man couldn't afford it!
Ingredients:
4 large potatoes, peeled and cubed into bite size pieces
1 cup milk
1 small onion, coarsely chopped
1 tbsp. galic salt (or powder)
1/2 tsp. salt
1/2 tsp. pepper
noodles
1 egg
2 tbsp. milk
1/2 tsp. salt
1 cup flour
2 tbsp. oil
Directions:
1. Place potatoes in large pot of boiling water, enough to more than cover potatoes.
2. Add garlic salt, salt, pepper, and onion.
3. Boil until potatoes are just tender enough for a fork to pierce.
4. Drain about 1/4 - 1/2 of water, depending on how much you have left.
5. Add milk, stir, and season if necessary.
6. Set aside.
7. Beat egg, milk, and salt, adding flour slowly just until you have a stiff dough.
8. Add more milk if dough is too thick. Keep your hands and counter well floured as dough is really sticky.
9. Flatten dough like a pie crust, and cut out thin slices for noodles.
10. Gingerly place noodles in boiling water with a small amount of oil, when just tender place on a paper towel to dry.
11. Add to soup when still warm.
