Pomegranate Walnut Chicken

This is also known as Fesenjam. This was the recipe of the week in the Thursday magazine dated Aug 17th-23rd'06. Enjoy!
Ingredients:
4 boneless chicken breasts
1 medium onion, finely diced
2 tablespoons lemon juice
pepper
salt (optional)
1 cup chicken stock
1/4 cup pomegranate molasses
1/3 cup walnuts, finely ground
1 tablespoon oil
Directions:
1. Saute the onion in 1 tablespoons oil till it is transparent.
2. Fold in the chicken breasts and cook on either side until browned.
3. Add lemon juice, salt, pepper and stir in the stock.
4. Allow to simmer for 15 minutes.
5. Fold in walnuts and pomegranate molasses.
6. Simmer for 45 minutes and then serve with boiled rice.
7. Enjoy!
