Pomegranate Spinach Salad

Ingredients:
1 (6 ounce) package baby spinach
1/2 cup low-fat swiss cheese
1/3 cup slivered almonds, toasted
1/2 cup pomegranate seeds
3 tablespoons canola oil
2 tablespoons sugar
2 tablespoons vinegar
1/4 teaspoon poppy seed
1/4 teaspoon salt
1/8 teaspoon ground mustard
Directions:
1. In a salad bowl, combine spinach, cheese, almonds, and pomegranate seeds. In a blender, combine the oil, sugar, vinegar, poppy seeds, salt, and mustard. Process until blended. Just before serving, drizzle dressing over the spinach and toss to coat.
