Pomegranate Gelatin

A great flavor and so easy to make! Much better than boring old boxed Jello! Note that the cooking time in this recipe is the refrigeration.
Ingredients:
2 cups pomegranate juice
1 tablespoon sugar
1 cup ginger ale
4 (1/4 ounce) packets unflavored gelatin
1/2 pomegranate, seeded (optional)
Directions:
1. Simmer pomegranate juice and sugar over low heat.
2. While simmering juice, dissolve the gelatin into the ginger ale.
3. In a gelatin mold or medium sized bowl combine pomegranate juice with ginger ale. Stir until fully combined.
4. Refrigerate for one hour.
5. Add pomegranate seeds to partially set gelatin, then refrigerate for at least another hour, until gelatin is fully set.
