Bright pomegranate juice is always a beautiful sight and serving these at a BBQ in the back yard or anything you may have planned that is fun. You need some time with this, from 4 hours up to 1 week ahead; didn't include time for chilling.
Ingredients:
3 1/2 cups pomegranate juice
1 1/2 cups plain rum or 1 1/2 cups light raspberry rum
1 cup creme de cassis or 1 cup cranberry liqueur
1/3 cup fresh lime juice
ice cube
pomegranate seeds or frozen green grapes, for garnish or kiwi, slices for garnish
Directions:
1. Combine pomegranate juice, rum, cassis and lime juice in a large pitcher.
2. Cover and refrigerate until cold.
3. In a blender, combine 1 1/2 cups juice mixture and 1 cup ice cubes.
4. Blend until slushy.
5. Pour into large martini or wine glasses; garnish as desired.
6. Repeat with remaining juice.
