Polvorones de Nuez are an old standard Mexican recipe that many of us here in the United States and Canada know as Mexican Wedding Cookies. I combined two different recipes to get this perfect one. They're easy to make and are absolutely melt-in-your-mouth delicious. Read more . Somehow they always manage to disappear first from any tray of assorted homemade cookies. Warm, fresh from the first dusting of sugar ... NIRVANA!
Ingredients:
1 cup butter (2 sticks)
1/2 cup sifted powdered sugar
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup skinned almonds, finely chopped
extra sifted powdered sugar
Directions:
1. Preheat oven to 325.
2. Beat butter till softened.
3. Add the 1/2 cup
4. powdered sugar and vanilla and beat till fluffy.
5. In medium bowl, mix together flour and almonds.
6. With mixer on low speed, gradually add flour mixture to butter mixture, beating till well mixed.
7. With hands, shape dough into 1 inch balls, and place about 1 inch apart on ungreased cookie sheets.
8. Bake for about 20 minutes or until light golden brown. DO NOT OVERBAKE! Place powdered sugar in a small paper bag.
9. With turner transfer 2 to 3 cookies at a time to the sugar in the bag.
10. Shake cookies in the sugar till coated.
11. Cool on rack.
12. When cookies have cooled, shake again in sugar.
