This is a great mail course salad. It is very flavorful and different than most meat or seafood salads. Easy to make too.
Ingredients:
3 lbs large scallops
toasted nut or seed powder (i use ground pecans or walnuts)
chilli powder
1 bag baby greens
1 bag blue tortillas chips
2 sliced apples
1 lg. purple onion sliced
citrus vinergarette recipe
1 small purple onion chopped
1 clove garlic chopped
1 cup citrus juice (i like a blend of lemon, orange and grapefruit)
1/2 cup olive oil
fresh basil
mix all 5 ingredients in blender until smooth
Directions:
1. Mix equal portions of nut powder and chilli powder
2. Dredge Scallops in mixture and pan fry in oil until browned
3. Arrange on platter Baby Greens, Tortillas chips, purple onion, and Sliced Apples
4. Top with Fried Scallops and Citrus Vinegarette
