Pollo Borracho (Drunken Chicken)

A Brazilian dish
Ingredients:
1/2 onion, minced
4 garlic cloves, minced
2 tablespoons butter
1/3 lb ham, diced
4 chicken breast halves, boned and skinned
1/2 teaspoon cumin seed
1/2 teaspoon dried sage
2 cups dry white wine
1 cup chicken stock
2 tablespoons butter
1 tablespoon flour
Directions:
1. Sauté onion and garlic in butter until onion is soft.
2. Butter a heavy casserole large enough to hold all ingredients.
3. Place half the ham in the bottom, chicken breasts on top, then remaining ham. Sprinkle with cumin and sage, add sautéed onion and garlic.
4. Add wine and stock to cover the chicken.
5. Cover the casserole and bake at 325° for 30 minutes, or until chicken is done.
6. Remove chicken and ham from the casserole to a deep warmed platter.
7. Reduce sauce over high heat, add flour to thicken slightly.
8. Pour sauce over chicken and ham. Serve.
