Polenta Cubes

Great to serve with salsa or use instead of croutons on salads!
Ingredients:
3 cups water
1 cup cornmeal, yellow
1 tsp salt
1/2 cup parmesan cheese
1/2 cup chives, finely minced
1/2 cup canola oil
Directions:
1. Stir the cornmeal in a fine stream into boiling salted water. Cook, stirring for about 20 minutes or until the polenta comes away from the sides of the pan. Add parmesan cheese and chives.
2. Prepare a 9 x 9 glass baking pan with nonstick spray (or use olive oil) and spread the polenta in the pan.
3. Chill the polenta. When polenta is firm, turn it out onto waxed paper and cut into 1 cubes.
4. Fry the cubes at high heat in the Canola oil, turning as the sides brown. Drain on paper towels.
