Poached Salmon With Peach and Mango Salsa

From Marguerite Henderson of Cucina Restaurant, Salt Lake City, UT.
Ingredients:
4 salmon fillets (8 ounces each)
2 cups water
4 bay leaves
1 pinch salt
1 pinch freshly-ground white pepper
1 lemon, juice of
3 peaches, pitted
1 mango, pitted and peeled
1/2 cup cilantro leaf
1/4 red onion, peeled
1 tablespoon sugar
1 pinch salt
1 pinch freshly-ground white pepper
1 lime, juice of
1/4 cup vegetable oil
Directions:
1. Place salmon, water, bay leaves, salt, pepper, and lemon juice in 12-inch skillet.
2. Cover; simmer for 8 to 10 minutes depending on thickness of salmon.
3. Remove from heat.
4. Remove salmon from liquid and chill until ready to serve.
5. For Salsa:
6. Place all ingredients in food processor.
7. Pulse on and off for 10 seconds or until fruit is coarsely chopped.
8. Taste for seasoning.
9. Serve salmon on bed of mixed greens, top with salsa and serve with fresh fruit.
