Poached Salmon In Mashed Potato Nests

This is an easy meal that looks like a gourmet dinner.
Ingredients:
4 lbs potatoes cooked and mashed with
1/2 cp milk
4 tbs. butter
salt & pepper
! tbs dill
1 lb salmon filets
1 thinly sliced onion
2 cps light chicken broth
1 small cucumber peeled and finely chopped1 cp yogurt
1 tsp salt
2 tbs lemon juice
pepper
1 tsp dill
Directions:
1. Chop cucumber and press between paper towels to remove excess water.Sprinkle with salt. That will help them to release the water. In a bowl mix the cucumber, yogurt,salt, pepper, dill and lemon juice to make a nice sauce. If it has excess water just drain it off.Prepare mashed potatoes with milk, butter, salt , pepper and dill.. Oil cookie sheet and place mounds of potatoes on sheet. Scoop out center to create the nest. Brown these lightly in a 350 degree oven. In the mean time heat the chicken broth in a flat dish or pan. Place salmon fillets in broth. cover with sliced onions and cover. Poach only til done. Remove from broth with slotted spoon. Drain well on paper towels. Place one fillet in each potato nest. Brown under the broiler just till golden on top. Place on plates. Spoon cucumber sauce down over all. This is oh so good. For pure elegance serve with fresh asparagus in Holandase sauce.
