Poached Cod in Tomato Sauce

A fresh tasting and easy dish. Serve with rice or pasta and a salad.
Ingredients:
1/4 cup olive oil
1 small onion, diced
1 teaspoon minced garlic
2 tablespoons capers
1 (28 ounce) can crushed tomatoes
salt and pepper
1 tablespoon fresh basil
1 1/2 lbs fresh or frozen cod fish fillets
Directions:
1. Heat oil in large skillet.
2. Add the onion and garlic. Cook till soft.
3. Add the crushed tomatoes and capers and simmer for 10 minutes or so.
4. Add the cod and simmer till flaky.
5. Add the basil and serve.
