Poached Chicken (For Chicken Salads)

This is from King's cooking studio as a method of cooking chicken to use in chicken salad.
Ingredients:
2 bone-in whole chicken breasts or 4 skinless chicken breast halves
2 carrots, sliced
1 onion, sliced
2 celery ribs, sliced
water, to cover
Directions:
1. Combine all in a 3 quart saucepan and bring to a boil.
2. Reduce heat to a gentle simmer and skim.
3. Whole breasts take 15-18 minutes while boneless breasts take 7-10.
4. *Allow to cool in the liquid COMPLETELY.
5. Drain and dice the chicken to use in salads or pot pies.
6. Reserve poaching liquid as a stock.
