Plump Pumpkin Pancakes

These are so incredible. The great pumpkin taste shines in this delightful recipe. Hope you enjoy as much as I do.
Ingredients:
2 cups all purpose flour
2 tablespoons light brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 egg whites
1-1/2 cups skim milk
1/2 cup canned pumpkin
1 teaspoon oil
Directions:
1. Combine flour, sugar, baking powder, cinnamon and nutmeg in mixing
2. bowl. In separate bowl beat egg whites until stiff. Combine milk
3. and pumpkin in large measuring cup. Add milk and pumpkin mixture to
4. dry ingredients, mixing well. Fold egg whites into flour mixture.
5. Heat griddle to medium and brush lightly with oil. Pour 1/4 cup
6. batter onto griddle for each pancake. Cook until tops are bubbly
7. then turn and cook until remaining side is golden brown.
