A favorite that my mother, Joan, used to make for a sweet treat
Ingredients:
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons sugar
3 tablespoons butter
1 egg
1/2 teaspoon vanilla extract
1 cup milk
4 -5 plums (sliced thin)
1 cup sugar
2 teaspoons cinnamon
3 tablespoons butter
Directions:
1. Preheat oven to 425 F.
2. Mix dry ingredients, then cut in butter with pastry blender.
3. Beat 1 egg in cup, add vanilla then fill the rest of the way to the 1 cup mark with milk and add to dry / butter mixture.
4. Grease pan and pat dough into pan.
5. assort 3-4 cups of sliced plums on top of dough in a spiral pattern.
6. sprinkle top with 1 cup sugar mixed together with 2 teaspoons cinnamon and 3 tablespoons melted butter.
7. Bake 25 minutes.
