Directions:
1. -2.5 lb Italian plums (you may use any stone fruit)
2. /3 c. sugar
3. c. apple juice or water
4. /4 c. cornstarch
5. T. lemon juice
6. /4 tsp. lemon rind
7. /8 - 1/4 tsp. cinnamon (optional)
8. Preparation:
9. Wash fruit and remove stone. Chop fruit coarsly. Bring juice and sugar to a boil, dissolving sugar.
10. Add fruit and cook for 3 minutes.
11. Add lemon juice and rind to taste. Dissolve cornstarch in about 3 tablespoons water. Add to pan in a thin stream while stirring constantly.
12. Bring back to a boil, stirring until mixture is clear. Remove from heat and cool.
13. Serve with (sweetened) whipped cream, vanilla sauce, yogurt, creme fraiche, or granola.
