This compote can be spread on bread or used as a topping for desserts. It can be frozen in batches so you can preserve the fruit for a few months in the winter without using too much sugar in the recipe. You can add more honey and spices (cardamom, vanilla, nutmeg, ginger, etc) to adjust the flavor of the compote to your taste.
Ingredients:
1 cup sliced plums (about 5 prune plums/italian plums)
1 tsp honey
1 tsp water (just a splash)
1 tsp cinnamon (few sprinkles)
Directions:
1. Wash and slice plums. Start heating plums in a saucepan or pot, and add water and honey when the plums start to warm up.
2. Mix in the spices with the fruit, honey, and water, cover the pot, and let the mixture simmer on low to medium heat for a couple of minutes. If you see the water bubbling too much, turn the heat down lower.
3. Keep stirring the mixture every few minutes. When you see the juice in the pot start to turn purple, and you see the fruit becoming very soft, mash the fruit with a spoon or potato masher.
4. Let the fruit sit and thicken (you can keep the heat on if there is too much water in the pot, or turn it off if it looks thick already) for a few minutes, and let the mixture cool off.
5. Jar the mixture and refrigerate or freeze.
