This is such an easy recipe to make - I hope you enjoy it -
Ingredients:
2 1/3 cups self-rising flour
2 cups white sugar
1 cup cooking oil
3 eggs
1/2 teaspoon cinnamon
1/2 teaspoon clove
1 cup pecans, chopped
2 (128 ml) jars strained plum baby food
1 cup icing sugar
lemon juice, to thin (about 1 lemon)
Directions:
1. Pour all ingredients in a bowl; mix well with a spoon. Pour into a well-greased tube or bundt pan.
2. Bake in a 350F oven for about an hour. Test to see if done. A few minutes more may be required. Cool in the pan for about 10 minutes.
3. Run a knife around the edge and then leave in the pan for awhile longer. Turn out onto a plate.
4. ICING: Combine icing sugar and lemon juice; pour over cake.
