My Polish heritage has contributed greatly to my love of cooking. This simple recipe is just one reason why. These are addictive. They are thin potato pancakes that beat plain ol' chips in my book!!!
Ingredients:
4 large potatoes, peeled and grated
1 teaspoon onion powder
1/2 teaspoon garlic powder
salt and pepper to taste
1/2 teaspoon paprika
1 tablespoon all-purpose flour
2 tablespoon of oil for frying
Directions:
1. In a medium bowl, combine all the ingredients, except oil, and mix well.
2. Heat the oil in a medium skill on medium-high heat.
3. Using a spoon, spread a thin layer of the potato mixture over the entire bottom of the pan.
4. Make as thin as possible without have holes or gaps.
5. Fry 2 minutes, or until golden brown, then flip with a spatula and cook the otherside.
6. Repeat with remaining potato mixture.
7. Don't be surprised if, by the time you're done with the last one, household hands will have eaten the whole batch!!!
