Plantain Chips (Platanutres)

Plantains are a member of the banana family and look like large bananas. They are hard and starchy when green, and are used much like a potato. They turn yellow, and then black, as they ripen. This is a yummy way to fix them! Prep time includes soaking time.
Ingredients:
1 large green plantain
1 quart water
1 tablespoon salt
vegetable oil
1/4 cup olive oil
1/4 cup white vinegar
4 garlic cloves, minced
1 teaspoon sazon goya (try my homemade version)
Directions:
1. Peel plantain, and diagonally cut into 1/8 inch slices.
2. Combine the water and salt in a large bowl, stirring until salt disolves; add plantain slices.
3. Cover and let stand 30 minutes.
4. Drain plantain slices well, and pat dry.
5. Heat 2 tbsp oil in a large skillet; add plantain slices and cook over medium-high heat, stirring constantly, until tender, but not brown.
6. Drain well on paper towels.
7. Mash each plantain slice with the bottom of a glass cup.
8. Pour oil to depth of 2-inches; heat till good and hot.
9. Fry plantains, a few at a time, until golden brown; drain on paper towels.
10. Serve plantain chips with Plantain Dip.
11. Plantain Dip: Combine all ingredients in a jar; cover tightly, and shake vigorously.
12. Chill at least 2 hours.
13. Shake just before serving.
14. Yield: 1/2 cup.
