This is a pantry friendly soup that is full of flavor
Ingredients:
1 medium onion, chopped
2 medium carrots, thinly sliced
1/4 cup chopped parsley
4 tbsp. oil
1 clove garlic, minced or pressed
8 to 10 spinach leaves, stemmed
1 can (16 oz.) tomatoes, crushed in puree or diced
1 tsp. sugar, optional
1 can (10 oz.) chicken broth
1 can water
1/2 cup long-grain rice
1 bay leaf
1/2 tsp. each dried basil and oregano leaves
1/2 tsp. black pepper
grated parmesan cheese
Directions:
1. Saute the onion, carrots and parsley in the heated oil until soft.
2. Add the garlic and cook 1 to 2 min.longer.
3. Stir in the spinach leaves, tomatoes, sugar, if used, broth, water, rice and seasonings.
4. Bring to boiling. Reduce heat and simmer, covered, for 40 min. Stir occasionally to prevent sticking.
5. Transfer to serving bowl. Serve with grated Parmesan cheese.
