At work we have a morning lunch about once a month, everyone brings something to eat. You pay AUD$2.00 (Goes to Charity) My Pin Wheels are the first to be eaten.
Ingredients:
2 sheets frozen puff pastry
2 sachets of tomatoe paste
4 middle bacon rashers
20 kalamatta olives (seeded)
1 medium onion
1 tablespoon fresh chopped mixed herbs
1/3 cup grated parmeson cheese
hot pepperoni to suit
1 egg
Directions:
1. 2 sheets of frozen puff pastry - allow to defrost
2. spread 1 sachet of tomatoe paste on each sheet of pastry
3. remove fat from bacon & cube bacon very small, spread over pastry
4. olives to be cubed very small, spread over pastry
5. onion to be cubed very small,spread over pastry
6. wash and chop herbs very small, spread over pastry
7. grated cheese - leave as is and spread over pastry
8. hot pepperoni to be cubed very small and spread over pastry
9. NOW! roll pastry as tight as you can till you get to the end.
10. wash beaten egg, with brush, over rolled mini pizza
11. With very sharp and thin knife, cut rolled mini pizza into 8mm slices and lay onto greased tray.
12. With preheated oven of 220c, place tray to top of oven.
13. Just to be sure, check bums of mini pizza's to make sure they are not burning.
14. Cook for 20 min. is generally the rule.
15. Once cooled - they can be frozen for later use.
