Pizza Meatballs For Appetizers Or Sandwiches

I found this recipe back in the 80’s in a monthly newsletter called “Cook’s Notebook”. I made it for a party, and placed 1 meatball into sub rolls that I had cut into pieces to fit the “1 meatball” size (I thought it would be less messy than having people pick them up with toothpicks). Read more . I served them as appetizers and they were a big hit…nice “pizza” flavor in a little bite-size bun - and the cube of mozzarella in the middle is a fun surprise. I haven’t made them in years, but after finding this recipe again, I will try to make up a batch and get some pictures.
Ingredients:
1 pound lean ground sirloin
1/2 pound spicy italian sausage (or mild, if you prefer)
1 cup finely crushed garlic croutons
1/4 cup finely diced sweet onions
1 egg, slightly beaten
1/2 teaspoon garlic powder
1 teaspoon garlic salt
1/2 teaspoon italian seasoning
10 ounce block mozzarella cheese
10 to 12 ounce can of your favorite pizza sauce (not spaghetti sauce)
fresh grated parmesan cheese for topping (i use about 1/2 to 1 cup, depending on how much i have on hand )
pepperoni slices, optional
Directions:
1. Cut the mozzarella into small enough cubes that you will be able to insert them into each meatball easily.
2. Combine meats, croutons, onions, egg and seasonings.
3. Shape meat mixture into bite-size meatballs.
4. Insert a cube of mozzarella into the center of each meatball, being sure it is completely covered by the meat.
5. Place meatballs on a heavy baking sheet and bake at 375 degrees until done, about 15 to 25 minutes (depending on the size of the meatballs).
6. When meatballs are cooked through, remove pan from oven and drain off excess drippings.
7. Pour pizza sauce over cooked meatballs and gently stir them to coat them with the sauce.
8. Return pan to oven and bake an additional 10 to 15 minutes, until sauce is hot (you can heat the sauce in the microwave or on the stovetop if you want to speed the process up a bit).
9. Remove pan from oven and sprinkle meatballs with grated parmesan cheese.
10. Serve hot, as an appetizer - or place on toasted sub rolls for pizza meatball sandwiches (a few slices of pepperoni added to the sub makes a good addition, too - or some sliced olives, etc...whatever you like on your pizza).
