I would have called this a casserole dish until we moved to Minnesota. Up here they make hot dishes, not casseroles! This is a large recipe that can easily be split in two, allowing you to freeze 1/2 for later. I sometimes add mushrooms and/or black olives.
Ingredients:
1 green pepper, diced
1 cup celery, diced
1 onion, diced
1 tablespoon olive oil
1 lb hamburger
10 ounces egg noodles
1 cup pepperoni, sliced
28 ounces pizza sauce, 2 jars
1 lb mozzarella cheese
Directions:
1. Preheat oven to 350 degrees F. Grease 9X13 pan.
2. Saute first 3 ingredients in olive oil until soft. Remove from pan and set aside. Brown Hamburger and add to vegetables.
3. Cook egg noodles. Drain.
4. In large bowl combine hamburger mixture, egg noodles and sliced pepperoni with pizza sauce. Put half in prepared pan and layer with half mozzarella cheese. Put other half in pan and add remainder of cheese on top.
5. Bake uncovered for 30-45 minutes until bubbly and beginning to brown.
