Got this recipe out of our church cookbook and have been using it for years. It is quicker than most pizza doughs as it doesn't require a long rising time. We use it for all kinds of pizza recipes and prefer the BBQ over the oven for delicious pizza. Read more . The number of servings depends on how many pieces each person devours!
Ingredients:
4 1/2 cups flour
2 pkgs quick rising yeast (or 4 1/2 tsps)
2 tsp salt
1 tsp sugar
1 3/4 cups very hot water( 50-55c)
1 tbsp olive oil
cornmeal for dusting the pans
2 12 foil pizza pans
Directions:
1. Makes 2 12 pizzas or 8 personalized. Increase by 1/2 again for 3 lg pizzas or even double to feed a crowd.
2. In a large bowl combine 4 cups of the flour, yeast salt and sugar.
3. Stir in hot water and oil.
4. Beat in enough of remaining flour to make a firm but soft dough.
5. Turn onto a litely floured surface, and knead for about 10 minutes. Here is where you get to have some fun and let loose of a few aggressions . I saw this on a Food TV show-can't remember the name- and found it works really well on this dough.
6. I knead in the flour til it is well incorporated and then pick up the whole ball of dough and slam it down onto the counter. Repeat about 30 times, knead a bit in between and slam another 30x or so. Knead some more and slam again x 30. Great exercise and makes a fabulous dough. Doesn't do that much for the glutes, but works wonders on the gluten!!
7. You can tell when the dough is ready because its nice and soft , not sticky, and offers little resistance when poked( think Pillsbury dough boy).Smooth and elastic would be the correct term.
8. Put it back in the cleaned bowl and rub a bit of olive oil all over the dough before you cover it. I let it rise in warm place about 15 minutes.
9. Meanwhile grease pans lightly with shortening and dust with cornmeal. this prevents the crust from getting soggy and adds a nice crispy/crunchy texture when baked.
10. Punch down dough gently, divide into 2 pieces and press into prepared pans. Some would roll it out, but I get the kids to just stretch it out in the pans and it forms a nice edge. We prefer a thicker., chewier crust, so if you like it thinner, use less dough.
11. Top with your favourite ingredients and bake or BBQ til golden.
