I have not tried this recipe. I got this recipe from Ossg Recipes. This recipe is from Mabel Hoffman's Crockery Cookery. Yield: 10 - 12 side dish servings or 6 - 8 main dish servings.
Ingredients:
1 lb pinto beans
3 1/2 cups water
4 tomatoes, chopped
1 onion, chopped
1/4 cup chopped red peppers or 1/4 cup green bell pepper
1 garlic clove, crushed
1 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
Directions:
1. Rinse beans, removing any foreign objects. Place in a large bowl.
2. and cover with water and allow to soak at room temperature.
3. overnight.
4. In a slow cooker, combine beans, water, tomatoes, onion, bell.
5. pepper, garlic, salt, oregano, and rosemary. Cover and cook on.
6. High 6 to 7 hours or until beans are tender. Top with mozzarella,.
7. then parmesan cheese. Cover and cook another 10 minutes or until.
8. cheese melts.
