My online community has an amazing cooking group and when I try one of the dishes, I always give my e-friends their props. (See Pendog's pineapple shrimp packets) Wenchie is from the UK and has named these tea time bagel pizzas . Read more . I normally make mine Brooklyn style with pizza sauce, cheese and herbs, but her rendition sounded too good to resist. These are great as party food, brunch, super bowl or made ahead of time and frozen for a rainy day. They really are quite good. I hope you enjoy these too!
Ingredients:
her original recipe
2 bagels
cheese
fresh basil
fresh flat leaf parsley (you can used dried if fresh are not available for both herbs)
2 mushrooms (large)
1 medium onion
5 fresh tomatoes
garlic puree
red sweet pepper
salt and pepper
garlic pepper
my ingredients, since i didn't have all the same things available
3 bagels
margarine
1/2 portobello mushroom cap
3 garlic cloves, diced
1/4 medium onion
4 artichoke hearts
1 1/2 cups organic cherry tomatoes
1 1/2 - 2 cups shredded mozzarella cheese
grated parmesano-romano cheese
dried thyme, basil, pepper and parsley to taste (i didn't measure)
Directions:
1. Chop and mix all the veggies, herbs and spices in a big mixing bowl. If you're using raw artichokes, you might need to cook them a bit to get them tender first.
2. Preheat oven to 400 F
3. She had garlic puree to spread over the bagels, but I didn't have any so I used olive oil margarine, then spread the veggie mixture evenly over the bagels.
4. Sprinkle shredded mozzarella evenly over bagels, then pamesano-romano, and a little parsley for color.
5. Bake bagels in 400 F oven for about 10-15 minutes or until cheese is melted. Once you have everything chopped, it's really quick and easy. Please see the photos I attached above of both hers and mine. Enjoy!
